A cow from Aubrac

A careful selection

We only buy our cows, veals and beefs in the farms of the Nasbinals county. We are used to work with some local breeders in whom we trust. Cows only eat the rich grass of the Aubrac highlands, hay and some cereals. We fully subscribe to the "De Lozère" quality charter that guarantees the origin of every animal.

We buy our porks from local breeders in small farms (in Lozère, Aveyron, Cantal).

We mainly owe the confidence of our customers and our growing fame to the constant efforts made for the selection of the meat we buy.


Traditional recipes in compliance with European norms

Since the beginning of the 1980's, we develop a range of traditional ready made meals (such as tripoux, cooked pork ribs, fresh sausage...) and pork made specialties (pates, fricandeaux...).

The success of these products led us to set up a new workshop in compliance with European norms in order to be able to sell our products all over France and abroad.

Many rewards in local gastronomic contests

We are members of the Gevaudan caterers network. This network gathers 12 caterers from Lozere. Its mission is to promote good quality recipes and products. We have already developed a quality charter for the making of some classical recipes (such as the preparation of ham, dry sausage and saucisson, pork liver pate, herbs sausage and the manouls).

Our commitment to make high quality products has been many times rewarded in local or regional contests.In the last gastronomy contests organised by the Trade Chamber of Lozere, we got prices in 1999-2000 for our tripoux (Silver medal) and our pork liver pate (gold medal), and in 2001-2002 for our poultry liver pate (silver medal) and again for our hand sewn tripoux (gold medal).
