The label guaranteeing the quality and origin of cheeses

The Appelation d'Origine Contrôlée (AOC) label governed by the law of November 28th 1955 guarantees the quality of products from the french terroirs. Cheeses with an AOC label must follow during their making process accurate specifications spanning from the choice of the milk to maturing.

Consumers are very sensitive to these signs of quality and origin for french products.
Among the 400 french cheeses, only 40 have the AOC label.
